Spinach Quesadillas

This recipe is a great way to get in a healthy serving of veggies and even if you don't love spinach try them--they don't have a strong spinach taste.
16 oz spinach washed
6 tomatoes diced
1 medium onion chopped
1 can corn
1 can black beans
16 oz shredded cheese
1 package flour tortillas
salt

1.     In a medium skillet sauté onion and salt to taste. 
2.     Top one half of tortilla with a layer of cheese, spinach, onion, corn, black beans tomatoes, another layer of cheese and salt to taste. Leave tortilla unfolded and place on cookie sheet.
3.     Place in oven at 350 for approximately 10 minutes or until spinach is slightly wilted.  Fold tortillas in half and cut.  Serve with sour cream or salsa.
Optional additions:
            leftover chicken to make chicken quesadillas, chopped cilantro, jalapenos
