Beef Stew with Bacon

1 lb beef stew meat, cut into 1 inch cubes
1 can (14.5 oz) beef broth
2 medium sweet potatoes, peeled and cut into 2 in pieces
1 large onion, cut into 1 ½ in pieces
2 thick-cut bacon, diced
1 teaspoon dried thyme
1 teaspoon salt
¼ teaspoon black pepper
2 tablespoons cornstarch
2 tablespoons water

1.     add beef, broth, potatoes, onion, bacon, thyme, salt and pepper into slow-cooker.  Stir to combine.  Cover and cook on low 7-8 hours or high 4-5 hours.
2.     Transfer beef and vegetables to serving bowl, keep warm
3.     Turn to high.  Combine cornstarch and water in small bowl until smooth.  Stir into liquid remaining in slow-cooker.  Cook 15 min or until thickened.  Stir in beef and vegetables.  Cover and cook 15 minutes or until warm.
