1 1b beef flank steak
1 can (14.5 oz) diced tomatoes with green chilies, undrained
1 cup chopped onion
½ medium green bell pepper cut into ½ in. pieces
1 clove garlic minced
½ package fajita seasoning mix
flour tortillas
1. Cut flank steak into 6 portions, place in slow-cooker. Combine tomatoes with juice, onion, bell peppers, garlic, and fajita seasoning mix in medium bowl. Pour over steak. Cover and cook on low for 8-10 hours or high for 4-5.
2. Remove beef; shred. Return beef to slow cooker and stir.
3. Serve with meat mixture rolled in tortillas. Tops with cheese, sour cream, or guacamole.
